Food Blog Round-Up: Vegetarian Recipes, Pretzel Day, and More

It’s spring, which means one thing … farmer’s market season. Food bloggers are taking advantage by staying in and cooking up delectable meals, or going out and trying the freshest produce on the menu. Read on.
Starting us of, Dana of Vanishing Veggie walks us through the week of her fresh vegan/vegetarian recipes. This includes a myriad of smoothies, colorful salads, and even vegan sushi from Whole Foods. She also has some guilt-free secrets for dinner – fresh spring rolls. She says, “Spring rolls are so easy. Just chop up a bunch of veggies you have in the house, roll them up, and shove them in your mouth.”
Rolling on the veggie train, the Southern Ash Blog talks a ‘Situation Vegetarian Dish – Minestrone Soup.’ You know the classic Italian dish, the one “that combines vegetables, beans, and pasta for a filling and hearty peasant’s soup.” DiPippa has you covered for those strange cooler spring days we’ve been experiencing in Rock City. He says, “That farmer’s market produce won’t eat itself,” and he’s right.
Along with spring’s fresh produce season, comes baseball season. Did you know today is National Soft Pretzel Day? Over on the Eggshell’s Blog, you can dive right in with a recipe for a Ballpark Soft Pretzel. They give you the rundown on the process: “Making these soft, salty iconic treats at home is a snap and doesn’t require any special equipment. If you’re looking for a summer snack or something different for your next party, we think these will do the trick!”
The Arkansas Literary Festival is going on this weekend. This premier event brings in various talented authors from all over. Shuler of Little Rock Foodcast had the chance to chat with Morgan Murphy, one of America’s most acclaimed food critics. Murphy has spent countless hours in the South, searching for the best eats off the beaten path. Shuler gives an overview of the podcast interview: “We discuss his stops in Arkansas, including Charlotte’s Eats and Sweets, Rhoda’s Famous Hot Tamales, and The Main Cheese. We also discuss Arkansas’ contribution to America’s bacon obsession and why bourbon reigns as king of Southern spirits.”
The River Market’s new diner stay, At the Corner, is garnering a lot of attention recently. Emily Van Zandt of Sync headed down recently to take stock of the eatery. Her overall take: “At the Corner is an ultra-convenient stop for downtown workers and dwellers looking for a quick bite at lunch or dinner. While its odd flavor combinations are sometimes over-the-top, we applaud the staff for thinking outside the box.”
